Cooking Tips

Turkey Stuffing

Mix dried fruits such as apricots into the traditional turkey stuffing to add texture and flavour.

Posh Nutty Dip

Finely chop a few toasted hazelnuts and add to softened whipped cream cream and a sprinkle of black pepper and chill for a few hours in the fridge. Great when served with smoked salmon or crudities.

Roasted Seeds

The full flavour of seeds come out when they are toasted. Place on a baking tray spread in an even layer and put them under the grill on a medium heat until they are just beginning to brown. Remove from the grill just before they reach optimum 'brownness' as their oil content means they continue to roast after they have been taken out of the heat.

Breakfast Suggestion

Mix 2 tablespoons of oats together with1 dessertspoon of sultanas and 1 dessertspoon of dried apricots and 1 tablespoon of finely chopped walnuts in an airtight bowl. Pour over approximately 100ml of semi skimmed or skimmed cow's milk or unsweetened soya milk, cover and store in the fridge overnight. Just before serving, add a drop more milk, then add a handful of fresh fruit in season and top with 1 tablespoon of low fat yogurt.
